TORONTO - April 23, 2019 - illiNews -- For centuries, udon has been among the most popular traditional dishes in Japan. Hailing from the southern-central region of Japan, Udon Kitanoya introduces Toronto to its most authentic taste of udonya. This noodle specialty restaurant will be the first to bring Kansai-style flavours with udon varieties from different regions of Japan.
What differentiates Kitanoya's udon noodles is their dashi broth. Dashi, the essence of Japanese ingredients, is the heart and soul of udon. Kitanoya's dashi broth consists of high quality ingredients including Japanese kombu and four different types of dried fish (tuna, mackerel, sardine and bonito) in order to reach Kitanoya's delicate yet full-bodied umami taste characteristic of authentic udon.
"We want to show Torontonians the intricacy of a great, authentic bowl of udon. It's a staple in many Japanese eateries across the city, but not many know the secret to elevating the dish" says Benson Lau, the co-owner of Udon Kitanoya. Lau is also the entrepreneur who brought Toronto its first Japanese souffle pancake shop last summer.
