Lockport, Illinois brewery blends sports culture, community fundraising, and approachable craft beer.
JOLIET, Ill. - illiNews -- Midwest Microbrew has released a new interview featuring Chad Lindahl, head brewer at Nik and Ivy Brewing in downtown Lockport, Illinois. The conversation covers the brewery's origin story, brewing philosophy, core beer lineup, and its deep roots in the local community.
Nik and Ivy Brewing opened as part of a broader revitalization effort in historic downtown Lockport. Owners Paul and Chrissy tapped Lindahl in early 2020 as the brewery's original startup brewer after he crafted sample beers as an informal audition. After a stint at other breweries, Lindahl returned to Nik and Ivy, bringing renewed focus to the taproom's beer program.
"It's a really comfortable, cozy atmosphere – one of those nice neighborhood spots," said Lindahl, Brewer at Nik and Ivy Brewing.
Lindahl's brewing philosophy centers on disciplined process and approachability. The taproom's flagship Dellwood IPA delivers a classic, balanced profile, while the best-selling 1853 Vanilla Cream – a lactose-sweetened ale with prominent vanilla character – evolved over multiple batches in direct response to customer feedback. A seasonal blueberry wheat ale called Lake Life rounds out the most anticipated annual releases.

"Great beer is made in the cellar – it's your practices there. Documenting everything and being diligent on the details is what separates beer," Lindahl said.
Beyond its taps, Nik and Ivy Brewing actively partners with local schools and sports boosters through regular fundraising nights. The brewery also accommodates private events – including bridal showers and wedding receptions – and serves locally sourced Candlelight Pizza. The taproom features multiple TVs, pinball machines, and games for families, positioning it as one of the Lockport area's most distinctive all-ages destinations.
