According to Jay Fiske, President of Powerhouse Dynamics (a Middleby company), the lack of visibility into fryer operations has been a major challenge for multi-site operators. He believes that OilSmart by Open Kitchen will help bridge this gap and elevate their performance.
The product offers a wide range of reports and visualizations that allow operators to compare locations, identify outliers, pinpoint root causes of issues, and identify training needs. For example, they can analyze top and bottom performers or track oil cost per cook per hour to determine which day parts need more attention. They can also compare one location's oil consumption against the enterprise average or monitor violations in oil quality over time.
